This little jar of Thyme Capitatus is a quick trip to a sun washed cliff overlooking the bright blue reaches of the Mediterranean Sea. Daphnis & Chloe's harvesters collect these buds adorned with purple flowers one by one by from the idyllic landscapes of Greece. Quite unlike the common thyme that might be hiding in your spice cabinet, this variety has an intense, flowery flavor that gets released right before you need it, simply remember to rub it with your fingers before using. Like oregano, thyme pairs beautifully with grilled meats and vegetables. Sprinkled on soft, fresh cheeses or olives, it is a pretty addition.
In addition to its culinary wonders, ancient Greeks used thyme for perfuming their baths and purifying their rooms, as well as its digestive properties. Try infusing a few buds in hot water for sipping after a long meal.
